Overview

An establishment famed for its French chic, unlike many in-hotel institutions this one is most certainly a destination and worthwhile option when it comes to having a few drinks in a swank locale.

“Champagne! In victory one deserves it; in defeat one needs it,” said Napoleon, who gave his officers bottles of champagne to be beheaded with their swords as a sign of victory – something you may find yourself repeating at the venue if the occasion calls for it (ask the bartender, it’s an investment worth making).

Such is the theme for Sabrage Bar, their menu offering a particularly fine selection of champagne and wine alongside a more than satisfactory selection of other beverages – and a notably enhanced assortment when it comes to spirits (ensuring nights can last a wee bit longer than expected should you end an afternoon or evening in the waterfront here).

Attentive staff and a constant stream of nibbles, accompanied by a full menu should hunger strike, only serve to cap off the experience – we suggest the venison terrine for a larger bite, or oysters just because – you’ve already decapitated a bottle of champagne, so why stop now?

Being French in design, of course bubbly would lend itself to the location – just as the champagne menu’s origins show.  A luxurious fit out accompanied by a superb view of the Viaduct Harbour, and top-notch beverages, ensures your wallet will notice the visit, but if you’re looking to impress or while away the hours in comfort there is no finer choice.
